We’re making popovers to go with our Roast Beast based off my great-great-grandmother’s recipe, which she used to make for the students of LA’s Westlake School for Girls (now the Bel-Air campus of Harvard-Westlake).
I panicked for a moment and said “but Mom, do we have bacon grease to line the pan?” and she just sighed and said, “Honey, we’ll use the grease from the roast.” And all was well.
